How can I protect my brand name, obtain the necessary paperwork to sell on Amazon and other platforms, and what is the overall process?

Protecting a brand name and gaining access to Amazon Brand Registry both flow from the same trademark application.

File a trademark application with the IP office in the jurisdiction where you sell or plan to sell. This can be the US, EU, UK, or any of the other 19 Amazon-accepted jurisdictions. Once the application is filed and a serial number is assigned (typically within a few business days), that number can be submitted to Amazon Brand Registry for enrollment. Full registration is not required; the pending application number is sufficient.

The trademark protects your brand in commerce; the Brand Registry enrollment unlocks Amazon's brand protection tools, including the ability to report and remove infringing listings.
